Savory Sunday!

I found this recipe in the newspaper as I was cutting out some coups the other day. (another great reason to get the paper, new recipes!) I made it for dinner that night and we LOVED it! It will for sure go into my meal rotation! You can snag the pasta for FREE and the Cream of Mushroom Soup for $0.59 at Smith's this week!

Chicken & Broccoli Alfredo

8 ounces linguine, I used Ronzoni Garden Delight (FREE)
1 cup fresh or frozen broccoli florets (from my Bountiful Basket last week)
2 Tablespoons butter
4 boneless, skinless chicken breasts (from my chicken stock pile in my freezer $1.69/lb)
1 can Cream of Mushroom Soup ($0.59)
1/2 cup milk
1/2 cup grated Parmesan or Italian blend cheese
1/4 teaspoon pepper

Prepare linguine according to package. Add broccoli during the last 4 minutes of cooking time. Drain well in colander

Heat butter is a skillet and gook over medium heat until browned. (I added some garlic seasoning to the chicken while cooking) Cut chicken into pieces.

Stir soup, milk, cheese and pepper together. Add soup mixture, linguine mixture and chicken back to skillet and cook until hot and bubbling, stirring occasionally.

I served it with our favorite go to garlic bread!

Slice french bread. Butter all pieces and then sprinkle with garlic salt and paprika. Broil in oven. Watch bread closely, it will burn quickly!

Chicken Enchiladas

This recipe makes 4 flour tortilla enchiladas with sauce left over to spread on top. You can easily double this recipe to make more.

1 can chicken
1 can Cream of Chicken Soup
1 cup sour cream
1/2 - 1 cup salsa, depending on how spicy you like them
shredded cheese, we like Colby-Jack
4 flour or 8 corn tortillas

In a bowl combine chicken, soup, sour cream and salsa. Spoon mixture into tortilla, cover with cheese and roll up. Place in 8x8 pan. Repeat with for the other 3 enchiladas. Top all enchiladas with more cheese and spread with remaining chicken mixture.

Bake at 350 for 20-25 minutes. To serve, top with more sour cream and salsa and guacamole and rice and beans on the side.

You could also put the rice and beans inside before rolling and baking

Potato Skins

Pre-baked Potatoes
Cheddar Cheese
Cooked and Crumbled Bacon
Chopped Grean OnionsMelted Butter

If you bake the potatoes in aluminum foil be sure to unwrap them right out of the oven so the skins don't get soggy. Once they are cool enough cut the potatoes in half and scoop out the center, leaving about a 1/2 inch layer of potato. Brush the potatoes all over with melted butter and put under the broiler for about 6 to 8 minutes or until they look a little browned. Now add the cheese, bacon and green onions, broil again for 1 to 2 more minutes or until the cheese is melted.

Roasted Asparagus and Zucchini

1 lb asparagus
1 zucchini

Break off the tough ends of the asparagus and, if they're thick, peel them. Cut zucchini into 1/4 inch discs. Place the asparagus and zucchini on a baking sheet, drizzle with olive oil, then toss to coat the asparagus and zucchini completely. Spread the asparagus and zucchini in a single layer and sprinkle liberally with salt and pepper. Then sprinkle with garlic salt. 1 Roma tomato, chopped up

Savory Sunday!

I had this marinade packet in my cupboard that I had gotten for FREE at Smith's awhile back and I thought I would whip up a little somethin', somethin' yesterday with it. It all panned out rather nicely! A shout out to Jaesi for the tortilla recipe! Here is what I did:

Tequila Lime Fajitas

3 chicken breasts
1 onion, sliced
2 small red peppers, sliced
2 small yellow peppers, sliced
1 package mushrooms, sliced
tequila lime marinade made as directed on package

Mix marinade in crock pot. Add chicken, onions and peppers. Cook on high for about 3 hours. Add mushrooms and cook about 2 more hours on low. Shred chicken and drain off liquid.

Texas Flour Tortillas

2 cups of all-purpose flour (can make them whole wheat by substituting 1 cup of whole-wheat flour for white flour)
1 1/2 teaspoons of baking powder
1 teaspoon of salt
2 teaspoons of vegetable oil
3/4 cups of warm milk

Mix together the flour, baking powder, salt and oil.
Slowly add the warm milk.
Stir until a loose, sticky ball is formed.

Knead for two minutes on a floured surface. Dough should be firm and soft.
Place dough in a bowl and cover with a damp cloth or plastic wrap for 20 minutes.

After the dough has rested, break off eight sections, roll them into balls in your hands, place on a plate (make sure they aren’t touching) and then cover balls with damp cloth or plastic wrap for 10 minutes. (It’s very important to let the dough rest, otherwise it will be like elastic and won’t roll out to a proper thickness and shape.)

After dough has rested, one at a time place a dough ball on a floured surface, pat it out into a four-inch circle, and then roll with a rolling pin from the center until it’s thin and about eight inches in diameter. (If you roll out pie crusts you’ll have no problem with this.) Don’t over work the dough, or it’ll be stiff. Keep rolled-out tortillas covered until ready to cook.

In a dry iron skillet or comal heated on high, cook the tortilla about thirty seconds on each side. It should start to puff a bit when it’s done.

Keep cooked tortillas covered wrapped in a napkin until ready to eat.
Can be reheated in a dry iron skillet, over your gas-burner flame or in the oven wrapped in foil.
While you probably won’t have any leftovers, you can store in the fridge tightly wrapped in foil or plastic for a day or so.
Makes eight tortillas.

Top with cheese, sour cream, or guacamole, whatever you like. I was too lazy to shred cheese, so we had ours with only ranch sour cream dip, yes the homemade chip dip, and it was most excellent!

Savory Sunday!

My husband and I made up this yummy burger recipe last summer. This is the ONLY way we make burgers now!

Burgers

1 pound ground beef
1 package bacon, cooked and crumbled
1 onion, grated very fine, like you would lemon zest, it mostly turns into juice
4-5 garlic cloves, grated very fine, like you would lemon zest
2 cups shredded cheddar or mozzarella cheese
3 tablespoons Worcestershire Sauce, maybe more

Combine all ingredients, form burgers and grill! They are also delicious when smoked! (that is if you have a great friend like we do, thanks Ken!)

Savory Sunday!

Don't be scared of this pizza crust. I had it this week and it is really good! Give it a try!

Cauliflower Pizza Crust

Steam fresh or frozen cauliflower until tender, but not mushy. Drain and let cool completely. Grate cauliflower to measure 1 cup, not packed.

Mix together:
1 cup grated caulifower
1 egg
1/2 teaspoon oregano
1/2 cup mozzarella cheese

Spread mixture on a generously sprayed cookie sheet. To be sure it does not stick, use parchment paper instead! Use a spatula to spread/pat it into a circle about 10 inches or so around. Bake at 440 for 12-15 minutes until it is browned, the edges will look almost burnt.

Remove from oven, if you used parchment paper, remove paer at this point. Top with pizza sauce and your favorite toppings.

Put pizza back in the oven under the broiler just until cheese is melted.
