Salsa Bites
11 ounces cream cheese, softened
1/3 cup thick and chunky salsa
2 eggs
1/2 cup shredded Cheddar Cheese
2 Tablespoons chopped olives
1 Tablespoon chopped green onion
1 garlic clove, pressed or chopped
1/4 cup sour cream
Stir cream cheese until smooth.
Add salsa and eggs, stir until combined.
Stir in cheese, olives, green onions and garlic.
Spray mini muffin pan, fill cups about 2/3 full.
Bake at 350 for 15-18 minutes or until center is set.
Let cool in pan 5 minutes, then remove to wire rack.
Spread tops with a small amount of sour cream.
