Sweet Tooth Saturday!

This is my mother in law's recipe. It tastes just like fried ice cream, without the frying!

Fried Ice Cream

1 cube butter
1 cup brown sugar
1 cup pecans, optional, we never use them
3 cups Rice Krispies
1/2 gallon vanilla ice cream, rectangle box works best

Melt butter in a saucepan then add brown sugar (and pecans if using them) stir until brown sugar is dissolved. Add Rice Krispies mix well. Press 1/2 of the mixture in the bottom of a 9x13 pan. Take the box off the ice cream and slice the ice cream into 1/2 inch slices and arrange over the mixture in the pan, covering the entire thing. Sprinkle the remaining mixture over the ice cream and pat down. Sprinkle with cinnamon and sugar if desired. Freeze for about 1 hour. Serve with caramel, hot fudge and/or magic shell of your choice.

This does not keep well for left overs as it will get soggy. If I make this for just a few people I just make the Rice Krispie mixture and serve it over the ice cream and toppings in separate bowls and store the mixture in an air tight container.
