Savory Sunday

Chicken Fried Rice

1 or 2 chicken breasts (cut up small)
3 scrambled eggs
1/2 package frozen peas and carrots
1/2 chopped white onion
1/2 t. garlic powder
2 c. white rice
1/4 c. butter
soy sauce

Cook rice as directed. Marinate chicken in soy sauce or mix together before cooking. Cook chicken in small amount of olive oil. Add onion and cook until clear. Add frozen peas and carrots. Cook until soft. Push mixture to the side of the pan and scramble the three eggs. Add rice to mixture and stir well. Melt butter and add garlic powder. Stir into mixture and add soy sauce to taste.
