So, technically this is not a "dessert", but it sure tastes like one! These sweet potatoes are always a hit at our Thanksgiving. This recipe will serve a big group.
Sweet Potatoes
6 c. mashed sweet potatoes (I use about 6 fresh and bake them for about an hour at 350 until soft)
1 c. sugar
1 c. milk
4 eggs
2 t. vanilla
1/2 c. melted butter
Topping:
3 c. chopped nuts (I like almonds, but use your favorite kind)
1 1/2 c. brown sugar
1 c. flour
2/3 c. melted butter
Peel the sweet potatoes and mash up in a mixer. Add sugar, milk, eggs, vanilla, and butter. Mix well. Pour into a big pan. Mix together the topping and sprinkle on top. Bake at 350 for 30 min.
Obviously this is not a low fat recipe, but hey- it's Thanksgiving!
