Savory Sunday!

Thanks again for this one Kristie! She made these Fajitas for us when we where in Idaho visitng them, they are so yummy!

Fajitas

Marinate 1 lb steak or 1 lb chicken in the following:
1/4 cup fresh lime juice
1/3 cup water
2 Tablespoons oil
2 large garlic cloves, minced
3 teaspoons vinegar
2 teaspoons soy sauce
1/2 teaspoon liquid smoke (can be made without this)
1 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
dash of onion powder
Marinate the meat overnight. The next day, grill the meat.

In large pan sautee in 1 teaspoon olive oil, until tender, but still a bit crisp:
1 yellow onion
1 green pepper
1 orange or red pepper
8 oz sliced mushrooms

Comine these ingredients in a small bowl and add mixture to veggies and cook down for about 2-3 minutes:
1 teaspoon soy sauce
2 Tablespoons water
1/2 teaspoon fresh lime juice
dash of salt and pepper

Add sliced meat and serve with your favorite fajita toppings on warm tortillas. Be sure to use the uncooked tortillas found at Costco (they are much cheaper there). Just cook them on a dry skillet before serving. Any tortillas will do, these just taste oh so good!
