Once again a recipe from my sister! We love to have breakfast for dinner or "linner" at our house and this recipe is perfect for that! This is so yummy and easy. You also could make this ahead of time and store in fridge overnight.
Ham, Cheese and Hash Brown Casserole
1 package frozen shredded hash browns, thawed (6 - 8 cups)
8 Tablespoons butter, melted
2 cups cooked diced ham (2 slices 1/4 inch thick from the deli)
2 cups shredded cheese (any kind)
1/2 cup chopped onion
optional could also add chopped red and green peppers
7 eggs
3/4 cup milk
salt and pepper to taste
Press thawed hash browns between 2 paper towels to remove excess moisture. Put hash browns in bottom of ungreased 9x13 baking dish. Drizzle 7 Tablespoons melted butter over hash browns. Sprinkle ham then cheese over hash browns. Saute onions (and peppers) in 1 Tablespoon butter. In large bowl beat eggs and milk, add onions and salt and pepper. Pour egg mixture over top. Bake at 375 for 35 minutes or until golden brown.
