Savory Sunday!

We love to make salads, tacos, enchiladas and burritos with these recipes. Both the chicken and the rice recipe make a lot, but don't be scared to make them, they both freeze really well!

Café Rio Shredded Chicken

5 lbs of chicken breast
1 small bottle Zesty Itallian salad dressing
1 Tablespoon chili powder
1 Tablespoon cumin
3 minced garlic cloves

Mix all ingredients together in a large crock pot. Cook on high for 5 - 7 hours. Remove chicken and shred. Reserve small amount of juice and pour over shredded chicken.

Café Rio Tomatillo Dressing

1 pkg Hidden Valley Buttermilk dressing mix (dry mix)
1 cup buttermilk
½ cup to 1 cup mayo (I use about 3/4 cup)
2 tomatillos
1 minced garlic clove
½ bunch cilantro
½ Teaspoon lime juice
½ to 1 small jalapeno, seeds removed

Mix all ingredients together in a blender. Could add more or less mayo as needed.

Café Rio Lime Rice

2 Tablespoons butter
1 chopped yellow onion
4 minced garlic cloves
6 2/3 cups water
8 Teaspoons chicken bouillon
½ bunch chopped cilantro
2 Teaspoons cumin
2 small cans diced green chilies
1 Tablespoon lime juice
½ Teaspoon pepper
3 cups rice (maybe 1/2 cup more) NOT INSTANT

In large pot saute butter, onion and garlic. Add other ingredients and bring to boil. Simmer until rice is cooked.
