Sweet Tooth Saturday!

Blueberry Buckle

1/2 C. shortening
1 C. sugar
1 egg
2 1/2 C. flour, divided
2 1/2 t. baking powder
1/2 t. salt
1/2 C. milk
2 C. fresh or frozen blueberries
2 t. lemon juice
1/2 t. ground cinnamon
1/4 C. cold butter

In a mixing bowl, cream shortening and 1/2 c. sugar. Add egg and mix well. Combine 2 c. flour, baking powder, and salt, add to creamed mixture alternately with the milk. Spread intoa greased 9 inch square pan. Toss berries with lemon juice, sprinkle over batter. In a small bowl, combine cinnamon with remaining sugar and flour, cut in butter until mixture is crumbly. Sprinkle over berries. Bake at 350 degrees for about 1 hour.
