Sweet Tooth Saturday!

Everyone probably has a recipe for banana bread, but this one is great if you are looking to switch it up a little bit. This recipe only makes one loaf, so double it if you want to make two loaves.

Banana Bread

5 T. butter
1/2 C. sugar
1/2 C. brown sugar
1 lg. egg
2 egg whites
1 1/2 C. mashed, ripe bananas
1 3/4 C. flour
1 t. baking soda
1/2 t. salt
1/4 t. baking powder
1/2 C. heavy cream (I use milk)
1/3 C. chopped walnuts (optional)

Preheat oven to 350 degrees. Spray bottom only of a loaf pan with cooking spray. Beat butter in large bowl with an electric mixer at medium speed until light and fluffy. Add sugar and brown sugar, beat well. Add egg, egg whites and vanilla. Beat until well blended. Add mashed banana, and beat on high speed for 30 seconds. Combine flour, baking soda, salt and baking powder in medium bowl. Add flour mixture to butter mixture alternately with cream, ending with flour mixture. Add walnuts to batter, if desired. Mix well. Pour batter into loaf pan, bake until browned and toothpick comes out clean about 1 hour 10 min. Cool bread in pan on wire rack 10 min. Remove bread from pan, cool completely on wire rack.
