Chocolate Mint Brownies
Brownies
Cream together:
1 cup softened butter or margarine
2 cups sugar
Add:
4 eggs
1/2 cup cocoa
Mix in:
1 1/2 cups flour
Spread in greased a sheet cake pan (jelly roll pan). Sprinkle the top with chocolate chips. Bake at 350 for 20 minutes.
Mint Filling
Cream together:
5 Tablespoons softened butter or margarine
3 Tablespoons milk
Add:
2 1/2 cups powdered sugar
1/4 teaspoon mint extract
a few drops green food coloring
Frost cooled brownies.
Chocolate Frosting
Cream:
6 Tablespoons softened butter or margarine
Add:
1/2 cup cocoa
2 2/3 cups powdered sugar
1/3 cup milk, a little more may be needed to reach spreading consistency
1 teaspoon vanilla
Frost on top of mint filling.
