Here is a great recipe that I have figured out myself using everyday ingredients. This could get really complicated, but I have simplified it. It tastes like the real thing! Sometimes if I cook too much rice for dinner, we will have this for dessert! So yummy!
Mango Sticky Rice
You can buy actual sticky rice, but I found a recipe that makes regular Calrose rice sticky.
1 C. rice
2 C. water
1/2 cup coconut milk (found in the Asian aisle)
3 t. sugar
1/4 t. salt
Mangoes
Measure rice into saucepan first, then add water. Only use a wooden or plastic spoon and stir a few times while heating on med-high heat. Once boiling cover and reduce heat to low. Cook for 20 minutes and stir only two or three times. Don't fluff with a fork, you want it to stick together.
While rice is cooking in a small saucepan combine 1/2 cup coconut milk, 3 teaspoons sugar, and 1/4 teaspoon salt, and stir over low heat until dissolved.
Dish up rice into bowls, pour sauce over rice and allow to soak in for 5 to 10 minutes. Top with sliced mango and add more sauce as desired.
